Hello Bloggies! I'm Baaack!


Ok, so I'm sorry to you blog addicts for not updating in awhile... there are a few reasons. 1. Thinks haven't been THAT interesting (which is not an excuse to a true blogger, so this will be good:) 2. We have been super busy, not doing fun things 3. I'm addicted to the new Twilight book series that teenage girls are crazy... it's SO good. Anyway, enough with the excuses, let me tell you what we've been up to!
The first football weekend was a GREAT weekend. My bestie Rachel, and our friend Ryan, came to town and stayed at our house. We spent Friday night having a game night with Matt and Julie and the rest of the fam. Scene It is a blast for those of you who haven't ever played. We went to the first game, always an exciting day, and went to my bro's house after. I forgot my camera, so I didn't feel it was blog worthy...

I got to go into the cath lab that Tuesday, which I also meant to bring my camera to! I scrubbed in for 5 surgeries with a local cardiologist and LOVED it. I was really nervous I might get woozy and pass, but it was really fascinating. Those would have been great pics... I was scrubbed in head to toe.

Last weekend was Melanie Massanelli's wedding. All the girlies came to town and we celebrated Kit and Mel all weekend! Cody snapped some good pics of the weekend. The rehearsal dinner was at Ella's and she had her ceremony at St. Joseph's Catholic Church and reception at UARK Bowl. It was a crazy couple of days, but I loved seeing my friends! Kit and Mel are SO sweet. The wedding had a very warm and happy feel...

Coy and I decided to use our fondue pot last week! (his idea, don't make fun) It really was something different and exciting. We used the Coq Au Vin recipe that the Melting Pot uses. It's a broth that you can cook veggies and meat in! We did squash, zucchini, mushrooms, steak, chicken and shrimp... yum, yum. It was much easier than you would think and added some fun to our work week:)


Coq Au Vin (in case anyone want to try)

Ingredients
3 1/2 cups vegetable stock
1/2 cup Burgundy wine
1/2 cup sliced mushrooms
1 tablespoon garlic, minced
2 green onions, sliced


Directions
1Heat vegetable stock in fondue pot until it begins to simmer.
2Add all other ingredients, bring to simmer.
3Place individual pieces of desired meat or veggies on fondue fork and put in pot until correct temperature has been reached. Lobster and shrimp may take under a minute to cook while beef and pork will take slightly longer. Take the necessary precautions so you don't eat raw meat.

We thought it needed a bit more flavor. I would suggest marinating meat, or at least adding some salt and pepp before you cook. Also, add more garlic, more wine, and veg. bullion cubes to the broth. Enjoy!

Bunko was this week too! For you girls who missed out, it was FUN! Claire had all kinds of tasty treats and we played Bullsh*t instead. It was really pretty funny. Our Bunko group has a "more the merrier" policy, so if any of you girls are interested in coming, just let me know! We'd be happy to have you:)
